Vegan Chocolate Browie Cake with Raspberries and Peanut Butter

Gooey and well risen, this brownie cake will definetely make you forget you're on a vegan diet.
An explosion of flavours will accompany every mouthfull of this dessert, perfect for any occasion, from breakfast to afternoon teas.


I used a 7 inches round tin to achieve the cake look, but if you prefere making brownies all you need to do is to use a wider and rectangular container.

Also, this recipe works really well if you fancy baking regular chocolate brownies (just omit peanut butter and raspberries).

Ingredients:
125 gr Spelt Flour
120 gr Plant Based Milk (or Water)
40 gr Dark Chocolate
20 gr Cocoa Butter
60 gr Brown Sugar
20 gr Caster Sugar
20 gr Maple Syrup
1 tsp Baking Powder
1/3 tsp Vanilla Extract
Raspberries (frozen or fresh)
Peanut Butter (preferably smooth)




Method:
Roughly chop chocolate and cocoa butter, add water and microwave at 800W for 40 seconds.


Whisk the mixture until both the chocolate and the butter are melted, then combine:


sugars, syrup, cocoa powder and vanilla extract..


..sift flour and baking powder.


Add raspberries..


..and pour the mixture in a spring form cake tin coated with baking paper. 


A few teaspoon of peanut butter on the top of the cake..


..a little swirl..


..and bake at 180° C for 20 to 25 minutes.

Torta Soffice alle Noci e Albicocche

Golosissimo dolce perfetto per la pausa thé o per una ricca e sana colazione.
Avevo da consumare la marmellata di albicocche che ho confezionato utilizzando le profumatissime albicocche del giardino della casa di Bari (grazie nonno Giuseppe per averle piantate decenni fa :) ).

Greedy dessert perfect for a tea break or for a rich and healthy breakfast topped by walnuts and homemade apricot jam (directly from the scented organic apricots my grandpa Giuseppe grows in his garden in Bari, my native town).



Ingredienti per una teglietta da 22x17 cm
300 grammi di silken tofu
3 uova intere
75 grammi di zucchero semolato
75 grammi di zucchero di canna
75 grammi di olio di semi di mais
150 grammi di farina per dolci (ho utilizzato un mix di farina 00 e amido di frumento al 30% trovato in dispensa)
2/3 bustina di lievito vanigliato per dolci
la scorza grattugiata di 1 limone
succo di 1/2 limone
marmellata di albicocche
250 grammi di noci intere

Ingredients for a baking tray of 22x17 cm
300 gr of silken tofu
3 whole eggs
75 gr of white sugar 
75 gr of brown sugar
75 gr of vegetable oil (corn)
150 gr of cake flour (mine is a mix of 00 flour and 30% of wheat starch)
2/3 sachet of vanilla-flavoured baking powder
1 lemon zest (grated)
the juice of 1/2 lemon
apricot jam
250 gr of whole walnuts

Preparazione:
Montate innanzitutto il silken tofu con lo zucchero, dopodiché incorporate anche le uova. Aggiungete l'olio di semi e il limone (succo e scorza). Mescolate e unite la farina a 1 cucchiaio alla volta e il pizzico di sale. Finite col lievito.
Preriscaldate il forno a 180°, trasferite il composto nella teglia precedentemente oliata e infarinata e infornate per circa 30 minuti.

Beat the silken tofu with the sugar and the eggs. Add the vegetable oil, the zest and the lemon juice, the flour (one spoon at time), one pinch of salt and the baking powder keeping beating.
Preheat the oven at 180°. Now pour the mixture into a baking tray, previosly greased and spread with a little flour, and bake for around 30 mins.



Lasciate quindi raffreddare a temperatura ambiente.

Allow to cool at room temperature.



Dividete il dolce in 2 per e farcitelo con abbondante marmellata (utilizzate come base la parte superiore, in modo da ottenere una superficie più liscia).
Richiudetelo e completate con un altro strato di marmellata.

Cut the sponge by its lenght then fill it with jam (to avoid an irregular outer layer, use the top as the base).
Spread on some jam as well.



Distribuite in cima delle noci sgusciate e servite :)

Place some walnuts on the top and serve :)
