Vegan Mushrooms and Beans Burgers

Hello everyone! Today I'm very pleased to share with you this amazing burger recipe, 100% plant based.


For 6 Burgers:
8 to 10 Closed Cup Mushrooms
1 can of Mixed Beans
1 handful of dried Porcini Mushrooms
1 jar of Mushroom Paste (optional)
4-5 tablespoons of Gluten Flour (or chickpeas flower for a GF version)
1/2 Onion
1 clove of Garlic
2 tablespoons of Liquid Smoke (optional)
1/2 teaspoon of Curry Powder
1 tablespoon of dried Parsley
1 tablespoon of Olive Oil
Salt & Pepper to taste

Method:
Dice the onion and place it on a plate with olive oil, salt and a splash of water.

Microwave for 4 to 5 mins at 800 W.


Wash and roughly chop the mushrooms. Blend with a food processor and transfer in a bowl.


Drain and rinse the beans and pour them in the blender. Add the onion, the garlic and the dried porcini mushroom (after soaking them in water for 10-15 mins)



Blend for a few seconds then add some liquid smoke for extra flavour.



Transfer the bean paste in the bowl with the mushrooms and combine the extra mushroom paste together with all the spices (curry, nutmeg, parsley, salt and pepper). Mix well then add some gluten flour.


Please note that the quantity of gluten may vary depending on how wet your mixture is. Make sure you achieve the consistency below :)


Allow the mixture to set for at least a 10ish mins. 
Now it's finally time to shape the burgers!
I usually use two plastic containers: easy peasy job that helps you straightforwardly achieve the perfect burger shape!

You only need to cover the first container with some film, pour a couple of tablespoons of mixture on it, and squeeze it down with the bottom of the second container.







Et voitlà! The burgers are now ready to go in the oven at 180° for 25-30 mins.


Once they're cooked you can eat them straight away or (recommended) fry each side in a pan for a couple of minutes before enjoing them in your favourite buns, or plain with a rich side salad :)

Xmas Pan Brioche Wreath with Shitakee and Porcini Mushrooms, Brie and Spinach

Ehmm, ehmm! 
Now it's really been a looong while since I haven't posted a little-tiny recipe. My apologies.

Hope you'll forgive me after taking a glance at this tastefull recipe I'm posting right now. 
It's a delicious pan brioche with a really rich and greedy filling. 
Allow me to suggest this dish for a Christmas or New Year's Eve buffet.

Ingredients:
..for the dough..
500 gr of Plain Flour
200 gr of Room Temperature Skimmed Milk
100 gr of Corn Seed Oil
2 Eggs
10 gr of Salt
12 gr of Yeast
1 tablespoon of Honey

..for the besciamella sauce..
300 gr of Skimmed Milk
30 gr of Corn Seed Oil
30 gr of Plain Flour
Grated Nutmeg
salt

..for the filling..
400 gr of Frozen Spinach
10 gr of Dried Porcini Mushrooms
20 gr of Dried Shitakee Mushrooms
40 gr of Brie Cheese
1 glove of Garlic
1 tsp of Onion Powder
2 tbp of Light Soy Sauce
2 tbp of E.V. Olive Oil

Make the dough by mixing all the ingredients in the following order: flour, yeast, honey, eggs, oil, milk and salt. Let it prove for about 1 hour (the more the best).

In the meantime let's take care about the filling: 
Let the dried mushrooms idratate first by placing them into a bowl and pouring them over some boiling water (enough water to cover them entirely). Wait for 30-40 mins then dry them.


In a casseroule pour a couple of tablespoons of extravirgin olive oil, an hint of onion powder, 1 garlic glove grated, salt, pepper and the spinach. Allow to cook at low heat for around 15-20 mins (covered).
Slice the reidrated mushrooms into thin stipes and add them to the spinach mixture. 


Cook for another 10-15 more then add the soy sauce.

In another smaller pot make the besciamella sauce: mix together the flour and the oil, then add very carefully the milk keep stirring with a whisk. Add some grated nutmeg and salt to taste and cook it at low heat until thicker (for around 7 mins stirring all the time).
Add the brie cheese to the besciamella sauce and let it melt at low heat. 


Combine both mixtures and allow to cool down.


Take the dough, divide it into two and roll each piece into a rectangle. 
Fill each rectangle with part of the filling and wrap it into a sausage shape.

Plait both rolls and give them a wreath shape. Seal the wreath with some water and apply some cherry tomatoes pierced with a wooden stick.



Allow to prove for about 1 hour more.
Preheat the oven at 200° C and cook the pan brioche wreath for 30-45 mins, until golden brown.


 Serve lukewarm and enjoy :)

Seitan my Way

Adoro produrre il seitan! Trovo che sia una delle cose più soddisfacenti da fare, perché ci si può realizzare veramente di tutto. Unica pecca: richiede tempo, moooolto tempo :(

I love making seitan! It is entertaining and fun, and very versatile as well. The only flaw: it requires time, too much time :(

In questo post vi proporrò la ricetta base, che si può ottenere partendo sia da una farina di forza che dal glutine.
Sarò sincera, preferisco utilizzare il glutine piuttosto che adoperare la farina, per ovvi motivi di tempistica.

This is the very basic version, to which you can add potentially any kind of spice (I love to add a fistful of dried porcini mushrooms). I rather use gluten powder instead of a strong flour, to make it quicker.

Ingredienti:
...per il seitan...
500 grammi di preparato per seitan
125 grammi di porcini secchi
20 grammi di sale
50 grammi di salsa di soia
acqua q.b.

...per il brodo vegetale...
1-2 carote
1 cipolla
1 costa di sedano
1 pezzo di alga kombu
1 cucchiaio di concentrato di pomodoro
2 cucchiai di salsa di soia

Ingredients:
...for the seitan...
500 gr of gluten powder
125 gr of dried porcini mushrooms
20 gr of salt
50 gr of soy sauce
water

...for the vegetable broth...
1-2 carrots
1 onion
1 stick of celery
1 piece of kombu kelp
1 tbs of tomato paste
2 tbs of soy sauce

Preparazione:
Iniziamo preparando il brodo. Laviamo e tagliamo a pezzi grossolani le verdure, e disponiamole all'interno di una pentola capiente con abbondante acqua, l'alga kombu e il concentrato di pomodoro.
Accendiamo il fornello e portiamo a ebollizione.

Let's prepare the broth first. Wash and roughly cut the veggies. Place them in a pot generously filled with water. Add the kombu kelp and the tomato paste. Put to boil.

Tritiamo i funghi secchi nel macinacaffè, fino a ottenere una polvere finissima. In un contenitore amalgamiamo assieme glutine e polvere di funghi, aggiungiamo il sale, la salsa di soia e tanta acqua quanto serve a ottenere un composto omogeneo (purtroppo non ho fotografato questi procedimenti, integrerò non appena avrò modo di rifarlo).

Grind the dried mushrooms into powder and combine them with the gluten in a bowl. Add the salt, the soy sauce and enough water until uniform (unfortunately I didn't take a picture of it, I will add one as soon as I make seitan again). 

Disponiamo il composto su un panno possibilmente bianco, quindi privo di coloranti, non trattato e non lavato con alcun detergente, ma solo con acqua bollente e bicarbonato di sodio. 
Lo modelliamo come una mega salsiccia e ne sigilliamo le estremità.

We will need now a colour free cloth, only washed with hot water and baking soda. Shape the dough into a big sausage and seal the ends.


Aggiungiamo la salsa di soia al brodo in ebollizione e mettiamo il nostro salamone a cuocere per circa 1 ora.

Add the soy sauce to the boiling broth and boil the seitan for 1 hour.

Trascorsa l'ora lo lasciamo raffreddare lasciandolo del brodo.
Quando sarà freddo lo estraiamo dal panno e possiamo adoperarlo come più ci piace.

Turn off the heat and allow to cool both the seitan and the broth.
Once chilled, we can remove the cloth and cook the seitan.


Purtroppo non ho nemmeno foto del seitan appena cotto, ma solo dopo averlo tagliato a cubetti e realizzato degli spiedini.

Once again I forgot to take a pic of it, but I did take one after cutting the seitan into cubes to cook it on a spit.

Zuppa Autunnale con Lenticchie, Orzo e Funghi misti

Eccomi qui a buttar giù il primo post di questa mia nuova avventura.
La prima ricetta che vi propongo è una ricetta prettamente autunnale, non potrei fare altrimenti visto che siamo nel bel mezzo di questa coloratissima stagione!
L'autunno, che per molti rappresenta forse la stagione più deprimente, ha per me qualcosa di magico: i suoi colori, i suoi profumi, i doni della terra! Poi lascia spazio a quella che per me è la stagione più bella dell'anno: il candido inverno.

Ma non è su questo che dobbiamo rivolgere la nostra attenzione.
L'autunno per me evoca 3 parole chiave: legumi, funghi e zuppe.
Infatti la mia prima proposta è una zuppa di lenticchie, orzo e funghi.

Ingredienti:
200 grammi di lenticchie rosse secche
100 grammi di orzo perlato
5 o 6 funghi shiitake secchi
10-15 grammi di funghi morchella cinese secchi (o orecchio di Giuda -> Auricularia Polytricha) 
5 grammi di porcini secchi
2 cipolle medie (o 1 grande)
2 spicchi di aglio
1 pezzo di alga Kombu
2 o 3 cucchiai di prezzemolo tritato 
1 o 2 foglie di alloro
1 rametto di rosmarino
1 peperoncino habanero (facoltativo, anzi altamente sconsigliato a chi, a differenza mia non ama il piccante)
1 cucchiaino di concentrato di pomodoro
2 cucchiai di olio EVO
brodo granulare in polvere
sale e pepe to taste

Preparazione:
Cuocere separatamente l'orzo e le lenticchie: il primo semplicemente in acqua bollente, le lenticchie in una pentola con circa 500ml di acqua, lo spicchio di aglio, 1/2 cipolla, l'alga Kombu, le foglie di alloro, il concentrato di pomodoro e il dado in polvere (circa 2 cucchiai scarsi).
Portare a ebollizione e attendere sui 35-40 minuti. Salare a seconda del gusto.

In un altro tegame stufate per 10-15 minuti la restante cipolla tagliata a dadini (o tritata, in base alle preferenze) e lo spicchio di aglio con olio, sale e un dito di acqua. Aggiungete il peperoncino e i funghi fatti a pezzetti, precedentemente ammollati. Cuocete a fuoco basso per altri 15-20 minuti.
Aggiungete in fine l'orzo, le lenticchie (con un po' del loro brodo, in base alla consistenza desiderata), il rametto di rosmarino e il prezzemolo. Aggiustare di sale e pepe e lasciate insaporire il tutto per altri 5 minuti.

Servite la zuppa ben calda con un filo di olio EVO a crudo.



Autumn Soup with Lentils, Pearl Barley and mixed Mushrooms

Here I am, ready for this new adventure and new beginning!
The first recipe I'm about to share with you is an autumn one, as we're right in the middle of this wonderful season. It's a soup made of 3 main autumn ingredients: lentils, pearl barley and mushrooms.

Let's take a look of what you'll need to make it:
7 oz of red lentils
3.5 oz of pearl barley 
5 or 6 dried shiitake mushrooms
2 or 3 tablespoons of dried Chinese mushrooms (Auricularia Polytricha) 
1 tablespoon of dried porcini mushrooms
2 medium onions (or a big one)
2 cloves or garlic
1 Kombu kelp
2 o 3 tablespoons of chopped parsley 
1 o 2 of bay tree leaves
1 little branch of rosemary
1 habanero (don't add it or add a little piece of it for a neutral soup)
1 teaspoon of tomato paste
2 tablespoons of olive oil
1 vegetarian bouillon cube
salt and pepper to taste

Instructins:
Put to boil the barley following its cooking instructions.
In another pot, combine lentils, about 500 ml of water, one glove of garlic, 1/2 onion, Kombu kelp, bay tree leaves, tomato paste and the buillon cube. Put to boil, then add the salt after 35-40 minutes.

In a third pot add the olive oil, the remaining onions (chopped or grated to taste), the garlic, a pinch of salt and 1/2 inch of water. Cook gently for 10-15 mins. Add the chili and the rehydrated mushrooms (chopped). Allow to cook for 15 to 20 mins.
Combine the barley, the lentils (with a splash of their water, to taste), the rosmary, the parsley, salt and pepper. Stir for about 5 mins then serve warm with a little dash of olive oil.
