Aubergine Katzu Curry - Vegan & Gluten Free

Sometimes all you need is a warm and tasty treat, and if this treat is also both homemade and quick: BINGO!

This is the case indeed. You can make it even quicker using some breaded mock chicken, breaded vegan burgers or whatever you like will do :) 
Even "plain", with some jasmine or basmati rice is quite a thing. A real comfort food, perfect to be enjoyed after a long and tiring day at work.

The version I'm about to show you is with mouthwatering aubergine disks coated in corn flakes (because this is also a gluten free version - but if you don't need to avoid gluten you should definetely use panko bread instead, as in the authentic japanese version) and oven baked. 
Of course you can also fry the aubergine, but I preferred to keep it lighter this time.



Ingredients (4 servings):

1 Aubergine
1 Onion
1 large Potato
5-6 Closed Cup Mushrooms
1 cup of Green Peas (frozen in my case)
1 clove of Garlic
2 Bay Leaves
1 tablespoon of Tomato Purè
1/2 cup of White Wine (optional)
2-3 tablespoons of Curry Powder
1 teaspoon of Ginger Powder (fresh would be even better)
3 to 4 tablespoons of Gluten Free Flour
1 liter of Vegetable Stock
2 cups of Plant Based Milk (oat)
1 cup of Corn Flakes (crushed)
1 pinch of Tumeric
1 tablespoon of Olive Oil
2 tablespoons of Vegetable Oil
Salt & Pepper to taste

Method:

1) THE CURRY

Rinse and chop the vegs for the curry: potato, mushrooms and onion.
First sautè the onion for around 10 minutes with some olive oil and salt...



...then add the vegs and the green peas. 

Cook for a couple of minutes, add the vine and let it evaporate.
Now it's time to throw in: garlic (grated), bay leaves, tomato puré, ginger. After another 2 to 3 minutes pour in the broth, cover and simmer for 15 to 20 minutes, until the vegs are tender.


2) KATZU AUBERGINE
Wash and cut discs of about 1 inch.



In a bowl combine flour, salt, pepper and a pinch of tumeric. Add slowly some plant based milk until you reach a runny yet thick batter.



Pour the cornflakes crumbs on a plate and get ready to coat!



Dip the aubergine discs in the batter first, then coat them in corn flakes. Place onto a baking tray, sprinkle with some vegetable oil and bake at 180-200° for 30ish minutes, turning the discs halfway.



3) THE CHOUX
Choux is important to thicken the curry. You can buy it ready from an asian shop (though that's hardly gluten free) or you can easily make your own in just a couple of minutes.

In a pan combine 2 tablespoons of (GF)flour, 1 tablespoon of curry powder and 2 tablespoons of vegetable oil. Cook at medium heat for 2-3 minutes, until you reach the consistency of the last picture.



Once the vegs are tender gently pour the milk in the pan where the choux is, and combine until it's runny and lumpsless.



Combine the choux mixture with the curry and allow to thicken for some extra 3 to 4 minutes.
Serve hot with some steamed jasmine rice, aubergine discs and paprika.

Udon Noodle Agrodolci con Peperoni e Zenzero - Ricetta al Microonde

Eccomi con un altro esperimento al microonde, ideale per chi va di fretta ma non vuole rinunciare a pastrocchiare un po'.
Sono partita da noodle precotti questa volta, ed è anche stata la prima volta che li ho provati e onestamente non mi sono affatto dispiaciuti! Ovviamente siete liberi di adoperare quelli secchi di qualsiasi formato preferiate! Un'ottima alternativa gluten free sarebbe utilizzare noodle di riso o soia.

Here is another microwave experiment. It's a very quick and tasty recipe made with pre-cooked Udon noodles which I used for the first time and I really enjoyed! 
Feel free to use any kind of noodles instead, try with soy or rice noodles for a gluten free dish.

Direttamente dal Giappone (giusto per rimanere sempre in tema coi miei coinquilini) i noodle Udon sono realizzati con farina di grano integrale e si prestano per lo più come base di zuppe o da gustare in brodo. 
Non dispiacciono però nemmeno in veste stir fry, con verdure e salse varie.

Straight from Japan, Udon Noodles are made by wheat flour and are usually served as a soup with flavoured broth.
Not bad also stir fried, with sauce and veggies.

Questa che vi propongo è proprio una versione stir fry semplificata (anche se il termine stir fry poco si applica al mio caso, poiché ho utilizzato esclusivamente il microonde), realizzata a partire da Udon precotti e una salsa agrodolce preconfezionata, che è facilmente reperibile qui in Inghilterra in comode bustine da 2 porzioni.

This is a simple stir fried version (though I didn't actually stir fry as I only used the microwave) made by pre-cooked udon noodles and a stir fry sauce very easy to find here in England.


Ma veniamo agli ingredienti utilizzati per 2 porzioni:
1 confezione di Udon noodle (300 grammi)
1 confezione di salsa agrodolce (120 grammi)
1 peperone rosso
100 grammi di macinato meat-free
1 pizzico di cipolla liofilizzata
1 pizzico di zenzero grattugiato 
1 pizzico di sale
1 cucchiaio di olio vegetale

2 serves:
1 box of Straight to Wok Udon Thick Noodles
1 box of Sweet Chilli Stir Fry Sauce
1 Sweet Red Pepper
100 gr of Meat Free Mince 
1/2 teaspoon of Onion Powder
1 teaspoon of Grated Ginger
1 tablespoon of Vegetable Oil
Salt to taste

Preparazione:
Laviamo e affettiamo a listarelle il peperone (nel mio caso ho utilizzato un cornetto) e lo disponiamo in un contenitore adatto alla cottura in microonde.

Put the red pepper previously washed and chopped into a microwave dish.
Aggiungiamo ora il macinato veg, l'olio, la cipolla lio, lo zenzero e il sale, e mescoliamo.

Add the meat free mince, oil, onion powder, ginger and salt. Mix well.


Cuociamo in microonde alla massima potenza per 3 minuti.

Microwave for 3 mins at 750/800w.

In un altro contenitore mischiamo i noodle alla salsa agrodolce e mettiamo anch'essi a cuocere in microonde per 1 minuto alla massima potenza.
Versiamo ora il peperone e il macinato veg sui noodle, mischiamo bene e rimettiamo al microonde per altri 2 minuti.
Serviamo caldo.

Combine in another dish both the noodles and the stir fry sauce. Microwave for 1 min.

Add the pepper and the meat free mince, mix well and microwave for 2 mins more.
Serve hot.

Zucchine Croccanti - Crunchy Courgette

Ricetta sprint e al contempo gustosissima, che accontenta un po' tutti i palati poiché anche vegana e senza glutine!
Vi occorreranno solo:

2 zucchine grosse

100 grammi di farina di ceci
30 grammi di farina di riso
180 grammi di acqua a T.A.
una manciata di prezzemolo tritato 
qualche fogliolina di menta
un pizzico di pepe

farina di mais q.b.
olio EVO q.b.
sale q.b.

Preparazione:
Iniziamo dalla pastella: versiamo in una ciotola le 2 farine e aggiungiamo l'acqua a poco alla volta, mescolando con una forchetta, finché non otterremo una pastella liscia, di questa consistenza:

Aggiungiamo il prezzemolo, la menta e il pepe. Mettiamo da parte.

A parte laviamo e tagliamo le zucchine in 3 o 4 per la lunghezza e successivamente ricaviamo delle fette doppie circa 5 mm, come nella foto:

(Io ho messo da parte le fette finali, quella della buccia, e le ho utilizzate per preparare a parte una frittata super veloce, sempre con la farina di ceci.)

Impaniamo le fettine ricavate nella pastella di ceci e le ripassiamo da entrambi i lati nella farina di mais.

Sistemiamo le fette pastellate e impanate su una teglia o placca da forno e le irroriamo con dell'olio di oliva.

Preriscaldiamo il forno a 200° e cuociamo con la funzione grill+ventilato per circa 20-30 minuti (a seconda del forno), ricordando di girarle a mezza cottura. Sforniamole e serviamole con un pizzico di sale!

In alternativa potete friggerle.

Il risultato è un contorno semplice e leggero che potrete servire semplice o con una salsina di accompagnamento. 
Io le ho abbinate a una fresca tzatziki :)



Crunchy Zucchini
This is a super quick recipe, very tasty and both vegan and gluten free!
You will only need:

2 big zucchinis

3.50 oz of gram flour
1 oz of rice flour
6.30 oz of R.T. water
1 bunch of grated parsley
some mint leaves
1 pinch of black pepper

cornmeal 
extra virgin olive oil 
salt

Instructions:
For the batter: put both flours in a bowl and gently add the water while stirring ('till you reach the texture of pic.1). Add the minced parsley, the mint and the pepper.

Wash the zucchinis and cut them into 3 o 4 pieces, then cut each piece into slices of 5 mm (pic.2).

Dive each slice into the batter, then rub them into the cornmeal both sides. Put the breaded slices on a baking tray and spread them with some olive oil.

Preheat the oven to 400° F. Cook for about 20 to 30 mins (turn the slices after 10-15 mins)using the grill and ventilated function. Once cooked add the salt and serve :)

Alternatively you can fry them, and serve with a sauce (I chose tzaztiki sauce).
